Job Summary

This position is responsible for managing and ensuring quality through the entire process of dividing dough into loaves and the enrobing process per the Standard Operating Procedure.

Essential Functions
• Ability to perform all Divider and bread catch positions.
• Able to multitask and maintain the flow of production.
• Ability to setup supplies on the line needed for the day’s production run.
• Ability to perform scale calibration and make scaling unit checks at the required frequency. Able to log into the divider weight check scale using your employee Id number while operating in the divider position.
• Efficiently execute the proper dough dividing procedures using the mechanical dividers and dividing by hand while maintaining proper dough weights.
• Able to run the sheeter/molder and auto-enrober ensuring the highest quality at all times to include but not limited to:
a. Able to conduct molder hole checks at the required frequency,
b. Able to adjust sheeting rollers, side guides, pressure boards and speeds as necessary,
c. Able to ensure proper dough spacing for adequate toppings coverage,
d. Able to properly process re-worked dough according to SOP’s.
• Ability to visually identify bread varieties to ensure compliance with Standard Operating Procedures.
• Maintain proper communication with Bread Catch Station and Mix Operators to ensure batch accuracy and timing.
• Maintain proper equipment speed per the divider set up chart (to decrease waste while maintaining required loaves per minute requirements).
• Proficient at completing paperwork (schedules, check lists, cleanup sheets).
• Changeover tasks:
a. Next batch set up (divider weights, speed settings, sheeter/molder and auto-enrober settings)
b. Clean up floors,
c. tables, 
d. scales, 
e. rounder and any other essential equipment.
• Ability to properly handle doubles per Standard Operating Procedures.
• Efficiently perform organic and allergen clean procedures for variety changes.
• Able to perform all department sanitation duties to include but not limited to:
a.  cleaning all department production equipment per SSOP in a timely manner,
b. perform makeup production floor sanitation duties per SSOP’s in a timely manner.
• Ability to perform mix test per Standard Operating Procedure.
• Ability to troubleshoot jam-ups appropriately to safely ensure minimal waste, injury and down time.
• Follow established quality control, contaminate and safety requirements.
• Must be available to participate in cross departmental training in all four production departments.
• Responsible for reporting food safety issues.


Knowledge, Skills, and Abilities
• High School Diploma or equivalent preferred
• Ability to recognize a variety of dough, toppings, and pans.
• Ability to understand production schedules.
• Ability to operate machines in a safe manner.
• Ability to maintain attention to detail while working in a fast paced environment.
• Ability to communicate batch specifications and timing with Bread Catchers and Mixers.
• Ability to communicate effectively with Assistant Supervisor about any equipment or batch failures.
• Ability to work successfully with a team
• Ability to learn and apply company standards including, but not limited to, lock-out/tag-out, safety practices, GMPs, SOP’s employee handbook, etc.
• Strong communication skills.
• Ability to follow quality standards and ensure those standards are met.
• Ability to perform calculations, read instructions, keep records and deal effectively with fellow coworkers in all departments.
• Ability to understand machine functions and troubleshoot operations as needed.
• Ability to understand and communicate instructions in English.
Working Conditions/Physical Factors: 
• Workers exposed to temperatures above 100 degrees for periods of more than one hour. More extreme temperatures possible during summer months.
• Worker exposed to a loud working environment.
• Worker exposed to hazards in the work place such as close proximity to equipment conducting extreme heat, moving parts, and electrical current.
• Must be able to keep a positive attitude and high level of motivation in order to ensure the highest quality of bread all the time.
• Must be flexible and willing to work any shift, time, day or holiday.
• Must be able to maintain a quick and steady pace when filling pans, moving baking racks and circulating empty/full bread pans.
• Ability to frequently lift/carry bread pans weighing up to 44 lbs.
• Ability to push/pull up to 350 lbs. (fully loaded bread rack).
• Frequent standing, bending, stooping required for the process of loading pans and oven racks.
• This work area demands a great deal of hard work and motivation from the panning team to ensure the highest quality of the bread every time.
• Subject to close quarters with fellow co-workers for long periods of time.
• Must have the ability to perform repetitive tasks quickly and accurately.
