Job Summary:

This position is responsible for performing pre-scaling, soaking, sponging, finaling and floating duties. These positions are an essential part of our operation. Mixing personnel are required to not deviate from the firmly established standard operating procedures. Concise scaling and an attention to dough development are essential to a quality end product. Working in a team oriented environment, a mixing area employee must insist on team accountability and trust in teammates. 

 

Essential Functions: 
• Ability to keep up with the flow of production and timelines given in bake schedules.
• Ability to execute all Standard Operating Procedures accurately.
• Responsible for knowing where supplies are located in the warehouse and what each ingredient is.
• Responsible for ensuring the use of ingredients in proper order via FIFO procedures and properly tracking ingredient lot changes.
• Responsible for managing the cleanliness of the Mix Room & mix room equipment. 
 Responsible for condition of all containers (to include but not limited to pre-scale containers, all secondary containers, mixing bowls etc.) to avoid cross contamination and/or product loss.
 Able to clean all equipment per SSOP in a timely manner.
• Ability to measure ingredients accurately.
 Responsible for accurately weighing and measuring numerous ingredients.
 Responsible for completing preparation of soak, sponge and finaling ingredients so they are ready prior to soak, sponge and finaling processes
 Responsible for combining pre-scale ingredients prior to the sponge, final and/or mix processes.
• Ability to perform scaling, preparation and mixing of ingredients for the indicated dough with complete accuracy and attention to detail.  Including, but not limited to, using the correct amount of ingredients per the recipe at the scheduled/set time, and monitoring bowl weights and dough temperatures at proper times as indicated on the recipes and bake schedules.
• Responsible for having pre scale product, soaks and finals in order, this ensures the Mix Department continues to operate smoothly during breaks and lunches.
• Responsible for notifying Mix Department Assistant Supervisor immediately if any error in the mix process is identified.
  Adjust formulation to meet conditions of ingredient variations per Assistant Supervisor’s instructions. 
 Responsible for notifying Assistant Supervisor of any equipment problems.
 Strong ability to communicate with Mix Room employees, ability to convey a concise message to and take direction from management, perform position handoff to relief when rotating positions, to ensure accurate process completion.
• Ability to complete required paperwork accurately and in a timely manner (in real-time). 
 Ability to review the production report from the previous day to aid in the mixing of a new production day.
 Responsible for following the Mix Department Schedules, paying close attention to the soak, sponge and final mixing schedules and adjusting process times accordingly.
• Responsible for completing mix room sanitation duties to include but not limited to cleaning all mix room equipment per SSOP in a timely manner.
• Must be available to participate in cross departmental training in all four production departments.
• Responsible for reporting food safety and quality issues.

 

Knowledge, Skills, and Abilities: 
• High School Diploma or equivalent preferred.
• Ability to understand production schedules.
• Ability to operate machines in a safe manner.
• Ability to maintain attention to detail while working in a fast paced environment.
• Ability to work successfully with a team
• Ability to learn and apply company standards including, but not limited to, lock-out/tag-out, safety practices, GMPs, SOP’s, employee handbook, etc.
• Strong communication skills.
• Ability to follow quality standards and ensure those standards are met.
• Ability to perform basic math calculations (add & subtract), read instructions, keep records and deal effectively with fellow coworkers in all departments.
• Ability to understand machine functions and troubleshoot operations as needed.
• Effective time management skills.
• Ability to plan and organize.
• Must be capable of understanding work instructions both verbal and written.
• Requires ability to maintain focus on task at hand and not be easily distracted.
• Ability to understand and communicate instructions in English.

 

Working Conditions/Physical Factors: 
• Workers exposed to temperatures above 100 degrees for periods of more than one hour. More extreme temperatures possible during summer months.
• Worker exposed to a loud working environment.
• Worker exposed to hazards in the work place such as close proximity to equipment conducting extreme heat, moving parts, and electrical current.
• Must be able to keep a positive attitude and high level of motivation in order to ensure the highest quality of bread all the time.
• Must be flexible and willing to work any shift, time, day or holiday.
• Must be able to work in environment containing flour dust, wheat, milk and nuts (allergens)
• Must be able to exert force or lift up to 50 pounds constantly, must be able to constantly exert force sufficient to move objects such as tables, stairs mixing bowls etc.
• Must be able to ascend and descend stairways, ladders and ramps.
• Must be able to stand for a long period of time, climb, reach, walk, lift, grasp, feel, bend and twist.
• Must have the ability to perform repetitive tasks quickly and accurately.
