SUMMARY

The Oven Operator is responsible for the proofing and baking of all breads to exact company standards. The quality and appearance of each finished product is dependent upon the Oven Operator.


ESSENTIAL FUNCTIONS
• Responsible for making sure the work area is prepared. Including, but not limited to, setting out the pan dollies, organizing the oven racks, pulling up needed cooling racks, looking over the schedules for the day’s production demands and rounding up all the cleaning utensils that will be needed.
• Responsible for setting the correct preset temperatures per the oven chart.
• Responsible for monitoring the proof boxes and product coming out of the proof boxes. Including, but not limited to, pulling bread at specified heights, monitoring proof box temperature/humidity, monitoring proof times and reporting discrepancies/concerns to the shift Supervisor and/or Production Manager.
• Responsible for reading, understanding and adhering to the standardized information on the oven charts.  Including following the oven and proofing charts and taking the final temperature.
• Responsible for loading the ovens with the appropriate product, monitoring bake times and temperatures. 
• Responsible for unloading the oven when the cycle is finished and ensuring that the bread looks right.  Size and coloration issues must be reported to the shift Supervisor and/or Production Manager immediately.
• Responsible for unloading the pans using the proper technique. Auto-Depanner or Manually Depanning. This must be done immediately after being taken out of the oven to improve the overall shape of the bread. 
• Responsible for placing bread on the cooling racks and sending the racks to the cooling room.  
• Responsible for lightly tapping the bread pans to remove excess debris before stacking on pan dolly.  Must ensure that empty pan dollies are stored appropriately to avoid injury.
• Responsible for the proofing and baking of other products in the bakery.
• Responsible for sweeping the oven area to ensure a clean and safe working environment.
• Responsible for documenting all the required information on the oven schedules.
• Responsible for equipment sanitation during down time.
• Must be available to participate in cross departmental training in all four production departments.
• Responsible for reporting food safety and quality issues.

 

KNOWLEDGE, SKILLS & ABILITIES
1. High School Diploma preferred
2. Ability to understand and apply to production baking charts and production schedules.
3. Ability to maintain attention to detail while working in a fast paced environment.
4. Ability to be flexible and maintain confidence when changes arise.
5. Ability to work successfully with a team.
6. Ability to learn and apply company standards including, but not limited to, lock-out/tag-out, safety practices, GMPs, employee handbook, etc.
7. Ability to understand and communicate instructions in English.
8. Understanding of temperature control methods.
9. Understanding of basic heat related illness prevention.
10. Minimum two years’ experience in a bakery environment preferred.

 

WORKING CONDITIONS/PHYSICAL FACTORS 
1. Workers exposed to temperatures above 100 degrees for periods of more than one hour. More extreme temperatures possible during summer months.
2. Worker exposed to a loud working environment.
3. Worker exposed to hazards in the work place such as close proximity to equipment conducting extreme heat, moving parts, and electrical current.
4. Worker required to push and/or pull 350 lbs. (fully loaded oven bread rack).
5. Worker required to work continuously in a hot humid environment.
6. Must be able to maintain a quick and steady pace when moving baking racks in and out of ovens.
7. Frequent bending, stooping, and squatting required for the process of loading and unloading the cooling and oven racks.
8. Must be able to keep a positive attitude and high level of motivation in order to ensure the highest quality of bread all the time.
9. Must be flexible and willing to work any shift, time, day or holiday.
